Recipe: Nutty Rice


1/2 cup chopped nuts
1-2 tsp. olive oil
1 cup thinly sliced onion
1 cup mushrooms
2 cups cooked basmati rice
2 Tbsp. grated parmesan
1/4 cup vegetable broth
1 Tbsp. soy sauce


Place a small skillet over low heat and add nuts. Let toast, shaking pan often, while you prep vegetables. When fragrant and lightly browned, remove from pan.

Increase heat to medium and add 1 tsp. of oil and the onions. Cook, stirring often, until onions are limp and lightly browned. Remove onions from pan and add mushrooms. Add more oil if needed Cook mushrooms, stirring once or twice, until golden brown. Remove from pan.

Mix together all ingredients except broth and soy, breaking up any lumps in rice if it’s cold. Mix broth and soy together and add to rice. Slightly more or less liquid may be needed to moisten everything. Place in a greased casserole dish and cover. Bake at 350° for 20 minutes until piping hot. Any cooked vegetable may be added to this with good results.
