Recipe: Spanish Rice Casserole


1 Tbsp. olive oil
1/2 cup chopped onion
1/2 cup sliced celery
1/2 a bell pepper, sliced
8 oz. ground turkey
1/2 tsp. cumin
1/4 tsp. chili powder
1 tsp. hot pepper sauce
vegetable broth as needed
tomato sauce as needed
1 cup uncooked rice


In an ovenproof casserole, sauté onion, celery and bell pepper in oil just until soft. Push to sides of pan and cook turkey just until done. Add cumin and chili powder and cook for 1 minute. Add rice and cook for 2 minutes, stirring often. Mix together tomato sauce and vegetable broth to make 2 cups. Add with hot sauce to pan and bring to a boil. Cook 3 minutes. Cover and bake 25-30 minutes until liquid is absorbed and rice is tender.
