Recipe: Greek Tuna Melt


1 can water packed tuna, well drained
1/2 cup kalamata olives, pitted and quartered
1/2 cup roasted sweet peppers
1/2 cup minced red onion
2 Tbsp. good olive oil
2 Tbsp. balsamic vinegar
1 tsp. dried oregano
4 slices sturdy bread
1 cup feta cheese, crumbled


Drain tuna and flake with a fork. Mix in olives, peppers, onion, olive oil, vinegar and oregano. Toast bread lightly. Divide tuna mixture between bread slices and top each with 1/4 cup feta. Run under broiler until cheese melts.
