Recipe: Surprise Sandwiches with Speck's Spinach Dip

Spinach dip is one of those rare delights that’s limited to parties. Dressed up with extra greens, however, it makes a delightful sandwich.


2 cups Speck’s Spinach Dip, below
8 slices whole grain bread
1 small red onion, thinly sliced
roasted red peppers
thinly sliced turkey
thinly sliced veggie “turkey”

(Based on a recipe by Cathy Speck)
1 package frozen spinach, thawed & squeezed dry
1 cup finely chopped fresh, raw spinach
1 cup finely chopped fresh, raw kale
1/4 cup mayonnaise
1/4 cup sour cream
1/4 cup cream cheese
1 Tbsp. black pepper (or to taste)
1/2 lemon, squeezed
6 Tbsp. chopped white onion (or to taste)
1-2 cloves garlic, minced (or to taste)
1/2 packet Fantastic Garlic & Herb soup mix


Toast bread until crisp and golden. Spread with 1/4 of the Speck’s Spinach Dip. Top with your choice(s) of onions, peppers, turkey or unturkey. Tastes best sliced diagonally.

Mix all ingredients together. Taste and adjust seasonings. Best if allowed to stand 1 hour before serving. Best if you don’t mention the fresh kale to anyone else.
