Recipe: Chili Tamale Casserole


3 cups leftover chili
1 bell pepper, sliced thin
1/2 cup grated cheese
1/2 cup fresh or frozen corn
2/3 cup masa*
3 Tbsp. softened butter
1 cup vegetable broth, mixed with
¼ tsp. hot pepper sauce


Cream 1/3 of masa with the butter.  Add ¼ cup broth.  Alternate masa and broth until you have a thick but pourable batter.  Put chili in greased casserole & layer other ingredients on top.  Pour/spoon batter over top of casserole.  Bake, covered, for 30 minutes at 350°.  Uncover and bake another 20 minutes until browned.
