Recipe: Cornbread Chili Hot Dish


1/2 lb ground beef or substitute
1 onion, diced
½ a bell pepper, diced
½ cup cubed sweet potato
½ cup corn kernels
2 cloves garlic, minced
½ tsp. cumin
½ tsp. red pepper flakes
14 oz can fire roasted tomatoes, drained
1 cup cornmeal
1 cup masa flour
¼ cup brown sugar
1 T baking powder
½ t salt
1 t chili powder
1 c sour cream
¼ c milk
1 egg
¼ cup oil


Preheat oven to 425°. Cook beef in a large skillet until barely done, crumbling it well in the process. Reserve. In the same pan, cook onion and bell pepper until barely tender. Add garlic, cumin and red pepper flakes. Stir in tomatoes and beef. Pour into oiled casserole dish. Mix remaing dry ingredients together. Mix remaining wet ingredients together. Stir well. Pour over top of beef mixture. Bake 20 minutes.
