Recipe: Fluffy Casserole


3 Tbsp. butter
2 Tbsp. flour
2 cups milk
1 tsp. dry mustard
½ tsp. salt
1/2 cup  shredded cheese
2 cups broccoli florets
4 oz. baked tofu, diced
½ cup biscuit mix


Melt butter.  Add flour and cook over low heat for 1 minute.  Add 1 ½ cups milk, stirring.  Cook over low heat until thick, stirring occasionally. Turn off heat. Add salt, mustard & cheese without stirring.  Let stand 2 minutes, then stir. Mix cheese sauce, broccoli and tofu in a greased dish. Mix biscuit mix with remaining milk. Drop by the spoonful onto casserole. Bake until top is golden, about 20 minutes.
