Recipe: Kashmir Casserole


1 package Tasty Bite Kashmir Spinach
8 oz. tofu
3 egg whites
1/4 tsp. salt
1 tsp. curry paste
1/4 cup finely grated parmesan
1 cup whole wheat bread crumbs
1 clove garlic, pressed
1 tsp. olive oil
1 tsp. lemon zest


Spread spinach evenly in bottom of a 9 x 12 baking dish.

Puree tofu with salt and curry paste. Add egg whites and stir. Spread evenly over vegetable mixture.

Mix together bread crumbs, garlic, olive oil and lemon zest. Sprinkle evenly over tofu.

Bake, uncovered, at 350° for 45 minutes. Place under a low broiler until nicely browned.
