Recipe: Sausage Coffins


1 Co-op Mild Italian Pork Sausage
1 finely minced onion
1 can sliced olives
1 28 oz can diced tomatoes, drained
4 oz mozzarella, diced.
6 Alexia ciabatta rolls, thawed


Cook sausage, breaking it up with a fork as you go. When sausage is done, but not yet browned, add the onion and cook 2 minutes. Drain and cool. Slice off the flat side of the ciabatta roll. Pull out insides with your fingers (reserve crumbs for another use) to make a shell. Mix olives, diced tomatoes and mozzarella with sausage.  Use to fill bread shells. Place filled shells in a small baking dish so they fit snugly into it. Bake 15 minutes at 350 degrees.
