Recipe: Super Speedy Party Pasta - #1

Serves 2.


8 oz. pasta shapes
1 cup broccoli florets, fresh or frozen
1/3 cup good olive oil
2 cloves garlic
1/4 cup almonds, slivered
1/2 tsp. red pepper flakes
1 can tuna, well drained
1/4 cup olives, slivered
1/4 cup finely grated parmesan


Cook pasta in lightly salted boiling water; add broccoli for the last 2-3 minutes of cooking time. In a non-stick pan, heat 1 Tbsp. olive oil and sauté garlic and almonds gently until fragrant. Drain pasta, reserving 1/4 cup of the cooking water. Add red pepper flakes, remaining oil, tuna and olives to the garlic and heat until just warm. Return pasta to pan and add sauce and cheese. Add reserved cooking water, a little at a time, if pasta seems too dry. Serve at once.
