Recipe: Vegetarian Muffuletta


8 green olives
8 kalamata olives
2-3 pickled peppers
2 artichoke hearts
1 clove garlic, minced
any fresh herbs you have
a bit of oil
ripe avocado
2 buns


Chop first six ingredients. Mix with a spoonful of olive oil. Let stand for an hour if you can. Spread olive salad on top and bottom of each bun. Layer cheese and avocado on bottom. Put on top of roll and press down firmly.
