Recipe: Veggie Cornbread Hot Dish


2 zucchini
1 onion, diced
1/2 a bell pepper, diced
2 cloves garlic, minced
1/2 tsp. cumin
1/2 tsp. red pepper flakes
2 1/2 cups pinto beans, drained
1/2 cup frozen corn
1 cup cheese, grated
1 cup cornmeal
1 cup masa flour
1/2 cup brown sugar
1 T baking powder
1/2 t salt
1 t chili powder
1 c sour cream
1/4 c half & half
1/4 cup water
1 egg
1/4 cup oil


Preheat oven to 425°. Dice zucchini, onion and pepper and cook until barely tender. Add garlic, cumin and red pepper flakes and cook briefly to develop flavors. Stir in beans. Pour into oiled casserole dish and top with cheese. Mix cornmeal, masa, sugar, baking powder & spices together. Mix sour cream, milk, egg and oil together and add to dry mix. Stir well. Pour over top of veg mixture. Bake 20 minutes.
