Recipe: Veggie Soft Tacos


2 cloves garlic, crushed
¼ tsp chili powder
¼ tsp. cumin
1 Tbsp. lime juice
1 tsp. olive oil
1 onion, sliced
2-3 cups sliced veg
oil for sautéing
4 flour tortillas


Mix garlic, spices, lime juice and olive oil.  Heat a large, preferable cast iron, skillet.  Add oil.  Add onions and cook 2 minutes.  Add vegetables and cook, stirring occasionally, until done to your liking. Add garlic mixture and cook, stirring, until most of the liquid evaporates.  Transfer to a bowl and let stand, covered, 10 minutes.  Serve in flour tortillas, with cheese, sour cream and/or salsa to taste.
