Recipe: Veggie Taco Filling


1 onion, sliced
2-3 cups sliced veg (carrots, summer squash, peppers, etc.)
oil for sautéing

2 cloves garlic, crushed
1/4 tsp chili powder
1/4 tsp. cumin
1 Tbsp. lime juice
1 tsp. olive oil


Mix garlic, spices, lime juice and olive oil. Heat a large, preferable cast iron, skillet. Add oil. Add onions and cook 2 minutes. Add vegetables and cook, stirring occasionally, until done to your liking. Add garlic mixture and cook, stirring, until most of the liquid evaporates. Transfer to a bowl and let stand, covered, 10 minutes. Serve in tacos, with cheese if you like.
