Recipe: Chicken à la King


1/4 cup sliced almonds
3 Tbsp. fat
2 Tbsp. flour
1 cup milk
1 cup chicken broth
1 1/2 cups cooked chicken
4 slices toast
salt and pepper


Toast almonds until brown & fragrant. Reserve. Heat fat in same pan.  Add flour and cook over medium heat for 1 minute.  Add milk & broth, stirring to avoid lumps. Cook over medium heat, stirring, until sauce begins to thicken.  Add chicken and heat through. Garnish with almonds and serve immediately over hot, crisp toast.
