Recipe: Julie’s Pork Tacos


1 sweet onion
2/3 lb. boneless pork (Niman Ranch loin chops are good)
salt and pepper
1 tsp. oil

2 cloves garlic, crushed
1/4 tsp chili powder
1/4 tsp. cumin
1 Tbsp. lime juice
1 tsp. olive oil


Cube pork in small dice and salt & pepper lightly. Cut onion into large dice. Mix garlic, spices, lime juice and olive oil. Heat a large, preferable cast iron, skillet. Add oil. Add onions and cook 2 minutes. Add pork and cook, stirring constantly, just until pink is gone. Add garlic mixture and cook, stirring, until most of the liquid evaporates. Transfer to a bowl and let stand, covered, 10 minutes. Serve in tacos. Or just stand at the counter and eat it, I don’t care. You can put peppers in this if you don’t live with Craig.
