Recipe: Cucumber and Celery Salad

Serves 4.


1/2 cup plain yogurt
4 Tbsp. chopped parsley
4 celery stalks
1 English cucumber
4 Tbsp. fresh lemon juice
2 tsp. olive oil


Wet a double layer of cheesecloth. Line colander with cheesecloth place in a large bowl. Put the yogurt in the colander refrigerate, covered, for 1 hour.

Wash the celery and cut it into thin slices. Wash the cucumber and cut it into thin slices. Mix the drained yogurt, parsley, lemon juice and oil together. Pour it over the celery and cucumber and mix.
