Recipe: Curtido (Cabbage Salad)


1/2 head shredded cabbage
1 carrot peeled and grated
4 cups boiling water
3 green onions- whites and light greens minced
1/2 cup white wine vinegar
1/2 cup water
2 Tbsp. dried oregano
1 to 2 tsp. crushed red pepper to taste


Combine carrots and cabbage in a large bowl. Pour boiling water over carrots and cabbage and let stand for 5 minutes. Drain well. Combine remaining ingredients with blanched carrots and cabbage. Put into sealed container and chill.
