Recipe: Summer Salad with Tuna and Citrus

Serves 2.


1 can tuna
6 oz. pitted olives
2 cucumbers, peeled, seeded & sliced
1 basket cherry tomatoes, halved

1/4 cup lime juice
1/3 cup good olive oil
1/2 tsp. dried tarragon
salt to taste

1 head lettuce, washed & shredded


Mix together tuna, olives, cucumbers and tomatoes. Whisk lime juice, olive oil and tarragon together and add salt to taste. Toss dressing with tuna mixture, and serve heaped on shredded lettuce.
