Recipe: Nina’s Arugula Pesto

1 to 1-1/2 lbs. arugula
1/2 to 1 cup grated Parmesan cheese
1/2 cup olive oil
1/2 to 1 cup walnuts
2 small cloves garlic
salt to taste


Wash and chop the arugula. Chop the walnuts and garlic. place the arugula, the garlic and some of all of the walnuts, olive oil, and Parmesan cheese in the blender. Blend thoroughly. If you need more liquid, add more oil (or add a little water if desired). Taste it. Add more of what you like. I usually add a little salt at the end. This pesto is great on pasta or sandwiches. My 2 year old loves this on pasta!
