Recipe: Tomato Alfredo - #1


1 Tbsp. olive oil
1 small onion, diced
2 cloves garlic, diced
1 can (28 oz.) diced tomatoes
1 tsp. dried oregano
1 Tbsp. capers
1/4 cup heavy cream
2 Tbsp. grated Parmesan cheese


Drain tomatoes, reserving liquid. In heavy pan, heat olive oil. Add onions and sauté until soft, about 3 minutes. Add garlic and cook 1 minute.. Add tomatoes and oregano and cook until hot through and tomatoes start to soften, about 5 minutes. Add capers and salt and pepper to taste. Push tomatoes to the side of the pan and add cream. Sprinkle Parmesan over top. Simmer without stirring until cream thickens, 2-3 minutes. If sauce seems too dry, add some reserved tomato liquid. Toss with pasta and serve.
