Recipe: Walnut Pesto


1 small clove garlic
1/3 cup walnuts
1/4 tsp. salt
1-2 Tbsp. olive oil or walnut oil


Peel garlic clove and grind to a rough paste along with salt in a mortar. Add 1/3 walnuts and grind until fairly fine. Continue adding walnuts 1/3 at a time and grinding until everything is finely ground. Transfer to a small bowl. Add sufficient olive oil to make a fairly smooth paste. Smooth surface and pour a little olive oil over the top. This will keep about 2 weeks in the fridge.
