Recipe: Tuna In Cucumber Boats - #1

Serves 2.


1 can tuna
2 green onions, finely chopped
1 tsp. cumin
1/4 tsp. salt
1 Tbsp. lime juice
2 Tbsp. olive oil
2 Tbsp. sour cream
1 hothouse cucumber or 2 smaller cucumbers


Drain tuna well and mix with green onions. Mix together lime juice, salt and cumin. Slowly beat in olive oil to form a thick emulsion. Stir into sour cream. Mix together tuna and dressing.

Wash cucumber and peel if desired. Cut into quarters. Using a sharp spoon, scrape out seeds and discard. Divide tuna mixture evenly between cucumber boats.
