Recipe: Cheese Quesadillas

Cheese quesadillas are nothing more than grilled cheese. Use grated cheese for even melting, and good flour tortillas. Heat a pan big enough to hold tortillas flat. Very lightly butter one side of a tortilla and place it butter side down in pan. Spread a fairly thin layer of grated cheese over the tortilla and top with a second tortilla, this one unbuttered. Cook over medium heat until golden brown; turn and brown other side. Remove from pan and let stand for thirty seconds before cutting into 1/6ths like a pizza.

If you’re cooking two quesadillas. you may either use two pans or stack the two quesadillas together in one pan. Cook on the first side about 2 minutes, then flip the whole stack and cook another two minutes. Turn the top quesadilla so the uncooked side is showing, then flip the whole stack once again. Keep flipping and turning until all sides are browned and cheese is melted.
