Recipe: Fried Apples’n’onions


1 Tbsp. oil
1 yellow onion, sliced thin
2 large tart apples, sliced thin
1 tablespoons brown sugar
1/2 teaspoon cinnamon
A few grindings of nutmeg
1 tsp. candied ginger, minced
1/4 cup cider vinegar, apple juice or water


Fry onions in oil until brown. Add the apples and cook 3 minutes.  Add remaining ingredients and stir gently. Cover and cook on low for 5 minutes. Remove lid, stir, and cook until most of the liquid is gone.
