Recipe: Bengalstrone

Serves 4.


1 Tbsp. olive oil
1 onion, diced
1 clove garlic
6 cups chicken or vegetable broth
1 package Tasty Bite Bengal Lentils
1 28 oz can diced tomatoes
A good handful of spaghetti
other vegetables to taste


Sauté onion in olive oil until fragrant, about 5 minutes. Add garlic and cook 1 minute. Add broth, lentils and tomatoes and simmer for 5 minutes. Break pasta into short lengths and add to soup along with any vegetables (fresh, frozen, canned or leftover) desired. Cook until pasta is tender and vegetables are heated through, about 15 minutes.
