Recipe: White Chili


1 lb. Great Northern beans
2 tsp. oil
8 oz. chicken stir fry
1 onion
4 stalks celery
2 cloves garlic
1 tsp. ground cumin
1 tsp. dry oregano
salt to taste
1 can mild green chilis
1 Tbsp. veg broth powder


Soak beans overnight. Cook chicken in oil until barely done. Reserve. Cook chopped onion & celery in same pan 3 minutes. Add garlic, cumin and oregano and cook until fragrant. Add chili, broth powder, soaked beans and water to cover. Simmer until beans are tender, ~ 90 minutes. Add chicken and heat through.
