Recipe: Christof's Stuffed Bell Peppers

Serves 4.


1 cup tofu, ground lamb or meat replacer
(1/2 tsp. teriyaki sauce for tofu)
1/2 cup chopped onion
1/2 cup mushrooms
2 cups frozen corn
1/4 cup vegetable broth
6 small bell peppers


If using ground lamb or meat replacer, cook until barely done. If using tofu, slice very thinly and sauté briefly with teriyaki sauce. Sauté onion and mushrooms until tender. Mix onion and mushroom mixture with protein, corn and vegetable broth. Add salt to taste.

Core and seed peppers. Stuff. Place in shallow pan and bake, covered, at 375° for 20 minutes. Remove cover and bake an additional 10 minutes or until tender.
