Recipe: Greens with Beans and Bacon


1 bunch greens
2 strips bacon
1 onion, minced
1 clove garlic, minced
1/2 to 1 tsp. red pepper flakes
¼ tsp. dried oregano
3 Tbsp. vinegar
1 Tbsp. honey or sugar
1 large sweet potato, peeled and cubed
1/2 cup pecans


Wash greens & cut into strips. Cut bacon into small pieces and cook until crisp; reserve. Cook onion in same skillet until nicely browned. Add garlic, spices, vinegar and honey and bring to a boil. Add sweet potato, cover, and cook 10 minutes. Add greens, cover, and cook to your taste. Stir in bacon and pecans. Taste and add salt or pepper if needed.
