Recipe: Stuffed Mushrooms - #1


3 Tbsp. olive oil
1/4 cup onion, diced
1/2 tsp. dried thyme
1/4 tsp. salt
1/4 tsp. white pepper
1 cup fresh bread crumbs
Milk or stock to moisten the dressing
16 button mushrooms


Wash the mushrooms and remove the stems. Chop stems very finely. Heat 2 tablespoons of oil in a frying pan. Saute the onion and stems for about two minutes. Add the thyme and saute one minute more. Turn the heat very low and add the salt and pepper, then the bread, tossing to coat with the oil. Add sufficient milk or stock to moisten the dressing lightly. Put the remaining tablespoon of oil in a baking pan and add the mushroom caps, turning to coat evenly with the oil. Fill the caps with the stuffing mixture. Broil until stuffing is lightly browned and serve immediately.
