Recipe: Sweet Potato Latkes


1/4 cup minced onion
1 large egg, beaten
1 tablespoon lime juice
1/3 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon smoked paprika
1/4 teaspoon freshly grated black pepper
1 lb. sweet potatoes
2 small Yukon gold potatoes
oil for frying


Peel & grate both potatoes. Mix everything except oil. Fill skillet with 1/2 inch oil and heat. Working in batches, spoon about 2-3 tablespoons batter into oil for each latke. Tamp down lightly to flatten, and cook until golden, about 2-3 minutes on each side. Drain and serve immediately with sour cream & applesauce.
