Recipe: Winter Squash Fritters

Makes about 24 fritters - serves 4.


2 cups pureed squash
1/2 cup minced onion (about 1/2 an onion)
1/4 cup finely chopped pecans
1 cup fine bread crumbs
1 egg
6 Tbsp. flour
1 tsp. salt
1/2 tsp. baking soda
1/2 tsp. nutmeg

olive oil


Mix all the ingredients except the olive oil. Add just enough olive oil to coat to heavy frying pan. Drop fritter batter by the teaspoonful into hot pan. Cook over medium heat until golden brown (about 4 minutes). Turn and cook other side until brown, 2-3 minutes. Repeat, adding more oil to pan, until all fritters are cooked.
