My name is Roberto Proietti and I am from Tuscany region in Italy where I lived for 32 years. I am not a professional chef BUT I've been teaching cooking classes in Davis since 2015 and now I teach regularly at Davis Adult School every quarter. My mission is to cook genuine food that is 100% authentic Italian - the way you would eat it only if you go to Italy.
