These mocktails are easy to make and easier for everyone to enjoy! Since it’s the holidays, they’re a little fancy too. Cheers!

salted caramel apple pie

Ingredients (makes 6 drinks)

  • 750 mL sparkling apple cider
  • 12 oz ginger beer
  • 6 oz caramel sauce, plus more for garnish
  • 1/4 tsp ground cinnamon, plus more for garnish
  • fresh whipped cream (recipe below)
  • flaky sea salt for garnish

Method

  1. In a large pitcher combine sparkling apple cider, ginger beer, caramel, and ground cinnamon. Stir until fully combined. Store in the fridge.
  2. Make the whipped cream. In a small bowl combine 1/2 cup heavy whipping cream, 1/2 tbsp maple syrup, and 1/4 tsp vanilla extract. Using a hand mixer beat until soft peaks form.
  3. Pour a tablespoon or two of caramel sauce into a small bowl. Dip the rim of each serving glass in the caramel. Pour cider mix into each glass. Top with a big scoop of whipped cream, a sprinkle of cinnamon, and a generous pinch of sea salt. Serve.

pomegranate punch floats

Ingredients (makes 6 drinks)

  • 32 oz pomegranate juice, chilled
  • 12 oz lemon soda (like San Pellegrino Limonata)
  • 3 cups pure pineapple juice
  • 1/2 tsp non-alcoholic vanilla extract
  • 2 tbsp pomegranate arils
  • 6 scoops rainbow sherbet

Method

  1. In a large pitcher combine sparkling pomegranate juice, lemon soda, pineapple juice, vanilla extract and pomegranate arils. Stir.
  2. Scoop rainbow sherbet into each glass. Pour punch over sherbet and serve immediately.
  3. Serving tip: serve with a dessert spoon and straw.

ginger pear sparkler

Ingredients (makes 4 drinks)

  • 1 cup coconut sugar (white granulated sugar works too)
  • 1 cup water
  • 1 tsp fresh ginger, grated
  • 3 rosemary sprigs, plus more for garnish
  • 3 cups pear juice
  • 24 oz ginger beer (the spicier the better!)
  • ice cubes

Method

  1. Make the ginger rosemary simple syrup. Combine coconut sugar, water, ginger, and 3 rosemary sprigs in a small saucepan. Cook over medium-high heat until boiling. Reduce heat and simmer uncovered for 10 minutes. Remove from heat and cool completely. Strain into a small jar and store in the fridge.
  2. Make the drinks. Fill glasses with ice. Add a tablespoon of the ginger rosemary simple syrup to each glass. Fill glasses halfway with pear juice. Fill to the top with ginger beer and stir. Garnish with a sprig of rosemary and serve immediately.

cranberry mimosas

Ingredients (makes 4 drinks)

  • 750 ml sparkling apple-cranberry juice
  • 8 oz orange juice
  • 1/4 tsp cinnamon
  • fresh thyme sprigs for garnish

Method

  1. Combine sparkling cranberry juice, orange juice, and cinnamon in a pitcher. Stir.
  2. Pour into serving glasses and garnish with a spring of rosemary.
