NA Blueberry Ginger Cooler

4 cups water

1.25 cups fresh blueberries

1 heaping tablespoon grated fresh ginger

4-5 tablespoons (or to taste) sugar or maple syrup

1 tablespoon fresh lime juice

to serve: unsweetened lemon-lime sparkling water

to serve: ice cubes

to serve: Garnish: blueberries, mint leaves and lime wheels

Add water, blueberries, ginger and sugar to a pot over medium heat. Bring to a simmer, then mash the blueberries and turn heat to low. Simmer for 10 minutes, stirring occasionally. Remove from the heat and stir in the lime juice. Cool completely at room temperature (2-3 hours). This is also important for the flavors to infuse each other. Strain the mixture into a jar with a good fitting lid. This is your blueberry ginger syrup! Refrigerate for up to 2 weeks.

To serve the blueberry ginger cooler, fill 2/3 of the glass with the syrup then add ice cubes. Fill with sparkling water and stir gently. Garnish with fresh blueberries, mint leaves, and wheels of lime.
