All Purpose Turkey Meatballs

1 lb. lean ground turkey

3 garlic cloves, minced

1⁄4 cup yellow onion, finely chopped

1⁄4 cup parsley, finely chopped

1⁄2 teaspoon salt

1⁄4 teaspoon freshly ground black pepper

1 egg, beaten

1⁄2 cup dry breadcrumbs (panko okay or use gluten free panko for gluten free!)

Mix all the ingredients in a mixing bowl. Shape into 30 meatballs approximately 1” across (it may help to do this with wet hands to avoid sticking).

Heat a skillet over medium heat. Add some oil (I prefer avocado) and place the meatballs in the pan in batches, being careful not to crowd them.

Cook the meatballs for 6-7 minutes or until cooked through and nicely browned on all sides. Transfer to a paper towel lined plate while you finish the others. Serve with pasta and tomato sauce, as the protein in a grain bowl, or pair with sweet Asian sauces. Make them mini for soup or entertaining. Appropriate for snacking too – dip in tzatziki sauce, yum!
