Avocado and Cucumber Salad

2-3 Persian cucumbers, cut into half moons

2 green onions, green and white parts thinly sliced

1/4-1/2 teaspoon grated fresh ginger, depending on how much you like ginger

1/2 teaspoon toasted sesame oil

1/2 teaspoon apple cider vinegar

Salt and pepper

Red pepper flakes

Optional: toasted sesame seeds

1 large ripe avocado, peeled and cubed

Combine cucumber half moons, green onions, ginger, sesame oil, apple cider vinegar, and a pinch each of salt and pepper in a mixing bowl. Add sesame if using, Toss until the cucumbers are evenly coated.

Carefully mix in avocado, being careful not to mash, but to mix. Serve immediately or allow the flavors to marry for 20 minutes at room temperature. Serve on good toast with spicy mayo, on top of rice or poke bowls, or with grilled salmon.
