Enjoy this super classic banana bread any time! Easily make it gluten free with only one ingredient swap.
1 stick unsalted butter at room temperature
1 cup granulated sugar
2 large eggs
1/2 tsp vanilla extract
1/4 tsp salt
1 tsp baking soda
2 cups all purpose flour (sub Bob's Red Mill 1:1 Gluten Free Baking Flour to make gluten free)
3 large very ripe bananas, mashed
1/2 cup walnuts, chopped
1/2 cup pecans, chopped
Preheat the oven to 325 degrees F. Grease a 9 x 5 inch loaf pan.
Using an electric mixer, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each. Beat in vanilla extract.
Combine salt, baking soda, and flour in a separate bowl. Add dry ingredients to the wet, beating on low speed until just combined. Stir in mashed bananas. Finally, fold in nuts.
Pour batter into the prepared loaf pan. Top with additional nuts if desired. Bake for 1 hour and 15 minutes or until a toothpick inserted in the center comes out clean. Allow to cool at least 30 minutes before slicing.
