Berry Quinoa Salad with Collagen
Collagen isn't just for your morning coffee or post-workout smoothie! This nutrient-rich salad is made even more nutrient-rich with the addition of Garden of Life unflavored collaged peptides to this creamy and delicious Honey Lemon Vinaigrette.
3 1/2 cups water
1/2 cup apple juice
1/2 tsp sea salt
2 cups quinoa
1 cup blueberries
1 1/2 cups raspberries or sliced strawberries
1/2 cup feta cheese, crumbled
1/4 cup almonds, chopped
Mint leaves for garnish
For the Lemon Honey Vinaigrette: 2 tbsp fresh lemon juice
For the Lemon Honey Vinaigrette: 1/4 cup avocado or olive oil
For the Lemon Honey Vinaigrette: 2 tsp honey
For the Lemon Honey Vinaigrette: 1 tbsp Garden of Life Unflavored Collagen Peptides
For the Lemon Honey Vinaigrette: 1/4 tsp sea salt
For the Lemon Honey Vinaigrette: 1/4 tsp black pepper
Bring water and apple juice to a boil in a pot. Add salt and quinoa, cover, and reduce heat to a low simmer and cook for about 15 minutes. Once quinoa has cooked, remove the lid and let cool, then gently mix quinoa with a fork.
In the meantime, make the dressing. Whisk all dressing ingredients together until smooth.
Place quinoa in a large bowl, then add in berries, cheese, and
almonds and toss with dressing. Garnish with mint leaves.
