Blueberry Ginger Balsamic Glaze

Serve over fresh fruit, brushed on grilled salmon, chicken or steak, as a salad dressing, or drizzled over vanilla ice cream.

1 cup fresh blueberries

2 tablespoons balsamic vinegar

3 tablespoons date syrup or 6 dates, pitted and chopped

½ teaspoon grated fresh ginger

1/3 cup water

Add all ingredients to a medium saucepan and bring to a boil. Reduce heat and simmer, uncovered, for 7-10 minutes, or until the glaze has thickened and reduced with all blueberries very broken down. Allow to cool for 10 minutes. Blend until very smooth. For extra smooth glaze, strain through a fine mesh sieve.
