Boozy Banana Bread

Banana Bread + Kahlua = YUM

3/4 cup granulated sugar

1/2 cup unsalted butter, softened

3 very ripe bananas, mashed

2 large eggs

1 tsp vanilla extract

2 cups all purpose flour

1/2 tsp salt

1 tsp baking powder

1 tsp baking soda

3/4 cup unsweetened shredded coconut

1 1/4 cups powdered sugar, sifted

1/2 cup Kahlua coffee liqueur

Preheat the oven to 350 degrees F. Grease a 9 x 5 inch loaf pan.

Using an electric mixer, cream together butter and sugar until light and fluffy. Stir in mashed bananas, eggs, and vanilla extract. Combine flour, salt, baking soda, and baking powder in a separate bowl. Add in a third of the dry ingredients and beat on low. Continue adding dry ingredients and slowly beating until just combined. Fold in the coconut. 

Pour into the prepared loaf pan. Bake for 45 minutes to 1 hour or until a toothpick inserted in the center comes out clean. Cool for 10 minutes. Remove from the loaf pan and finish cooling on a wire rack set on top of wax or parchment paper. 

While your banana bread is cooling, make the glaze. In a medium bowl, whisk together powdered sugar and Kahlua. Once cool, poke holes in the top of the banana bread with a wooden skewer. Pour the glaze over the top of the loaf. Slice and serve.
