Bread & Butter Fridge Pickles

Sweet and sour Bread & Butter Pickles are a delicious addition to sandwiches and burgers. They're even better chopped up and added to a salad or grain bowl. These are quick pickles, but will still take 24 hours in the fridge before they're ready.

Combine cucumbers and salt in a colander set over a bowl. Cover and chill for 1 1⁄2 hours. Rinse thoroughly under cold water. Drain well and transfer to a mixing bowl. Add onion and garlic to the bowl and toss.

Combine the sugars, vinegars, mustard seeds, celery seeds, cloves and ground turmeric in a medium saucepan; bring to a simmer over medium heat, stirring until the sugar dissolves.

Pour the hot vinegar mixture over the cucumber mixture and let stand at room temperature for 1 hour. Cover and refrigerate 24 hours. After 24 hours, enjoy! Store in an airtight container in the refrigerator for up to 1 month.

  • 1½ pounds slicer cucumbers, sliced ¼-inch thick
  • 1½ tablespoons kosher salt
  • 1 cup thinly sliced sweet onion
  • 3 cloves garlic, chopped
  • 1 cup granulated sugar
  • ¼ cup light brown sugar
  • 1 cup white vinegar
  • ½ cup apple cider vinegar
  • 1½ teaspoons mustard seeds
  • ½ teaspoon celery seeds
  • ½ teaspoon whole cloves
  • ⅛ teaspoon ground turmeric
