Chocolate Chai Cutout Cookies (gluten free option!)

Sweet and savory cutout cookies featuring a locally made chai spice blend!

2 3/4 cups all purpose flour (or 2 3/4 cups Bob's Red Mill Gluten Free 1:1 Baking Flour)

1 1/2 tsp baking powder

1/2 tsp salt

1/4 cup cocoa powder

1 tsp Masala Blend Chai seasoning

1 tsp cinnamon

1 cup granulated sugar

3/4 cup light brown sugar

1 cup unsalted butter, softened

2 eggs

1/2 tsp vanilla extract

  1. Preheat the oven to 350 degrees F. Line baking sheet with parchment paper and set aside. Combine flour, baking powder, salt, cocoa powder, Masala Blend Chai seasoning, and cinnamon in a large bowl. It may help to sift flour and cocoa powder to avoid clumps. Whisk until fully combined.
  2. In the bowl of a stand mixer, combine sugars and butter. Beat until fluffy. If you do not have a stand mixer, combine in a bowl and use a fork to cream the butter and sugar together. Mixture should be light and fluffy.
  3. Add eggs and vanilla to the butter and sugar. Beat until fully incorporated. Slowly fold in the dry ingredients until just combined. Avoid over-mixing.
  4. Flour your workstation, rolling pin, and cookie cutters so the dough doesn’t stick. Roll out the dough to desired thickness (1/8 – 1/4 inch). Use cookie cutters to cut out shapes. Transfer to parchment-lined baking sheet and bake for 10-13 minutes. Since these cookies are dark, you will not see the edges turn brown.
