Citrus Carne Asada
2 lbs. SunFed Ranch flank steak
2 teaspoons salt
2 teaspoons pepper
2 teaspoon cumin
1/4 cup fresh lemon juice
1/4 cup fresh lime juice
1/2 cup fresh orange juice
1/2 cup fresh grapefruit juice
1 jalapeno, sliced
1 bunch of cilantro, washed and finely minced
1 medium onion, diced
La Familia Tortilla Shop tortillas (or your favorite, but these are locally made using the nixtamal method!)
Pat meat dry with paper towels. Season generously with salt & pepper on both sides. Place in a large resealable plastic bag along with lemon, lime, orange, grapefruit juice, jalapeno and cilantro. Place in the fridge to marinade for 20 minutes (high acid marinades don’t need much time; in fact, the acid will start to chemically cook the meat if you leave it too long).
Heat a grill or skillet over medium-high heat. Grill 6 to 8 minutes per side, depending on thickness or until internal temperature reaches 140°F.
Remove to a platter, allow meat to rest for 10 minutes (letting it rest is so important). Dice finely, serve in warm tortillas garnished with onion and cilantro.
