Classic Hanukkah Latkes

Grate the potatoes and onion using a box grater or food processor. Place the grated mixture in a clean kitchen towel and squeeze out as much liquid as possible.

In a large bowl, combine potatoes, onion, eggs, flour, salt, pepper, nutmeg, and garlic. Mix well.

Gently fold in the sliced green onions. Heat about 1/4 inch of oil in a skillet over medium-high heat. 

Scoop about 1/4 cup of the potato mixture per latke, flatten gently in the pan, and fry 3–4 minutes per side, until golden and crisp. Transfer cooked latkes to a paper towel–lined plate to drain. Serve hot with applesauce or sour cream. Enjoy!

Ingredients

  • 2 lbs russet potatoes, peeled
  • 1 small onion
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Pinch of nutmeg
  • 1–2 cloves garlic, minced or grated
  • 2 green onions, thinly sliced
  • Vegetable oil, such as grapeseed oil, for frying
