You may know this dip as Texas Caviar or Cowboy Caviar and our version is very similar featuring southwestern flavors and a pickle-y vinaigrette that ties it all together!

Combine dressing ingredients in a large measuring cup. Set aside.

Add caviar ingredients to a large mixing bowl. Pour dressing over the mixture and stir until evenly coated. Taste and add more salt or lime if needed. Serve with tortilla chips!

Ingredients

  • Dressing: 1/3 cup olive oil
  • Dressing: 1/3 cup sweet relish
  • Dressing: 2-3 limes, juiced
  • Dressing: 3 cloves garlic, minced
  • Dressing: 1 small can of nacho-style pickled jalapenos, chopped
  • Dressing: ½ teaspoon garlic powder
  • Dressing: 1 teaspoon salt or to taste
  • Dressing: 1 teaspoon ground cumin
  • Dressing: 1 teaspoon smoked paprika
  • Dressing: 1/2 teaspoon chili pepper, or to taste
  • 1 small or medium red onion, diced
  • 1 small or medium red bell pepper, diced
  • 1 can black beans, drained and rinsed
  • 1 can three bean blend, drained and rinsed
  • 2 cans corn, drained
  • 2-3 roma tomatoes, diced
  • 1 bunch cilantro, finely chopped
  • tortilla chips for serving
