DIY Granola

Make a big batch of granola on the weekend for eating all week! This recipe is refined sugar free and very customizable.

4 cups old-fashioned rolled oats (use certified gluten free oats to make this gluten free)

1 ¼ cup raw nuts

2 tablespoon seeds (chia, hemp, pepitas, etc.)

¾ teaspoon salt

½ teaspoon ground cinnamon

½ cup melted coconut oil or olive oil

½ cup maple syrup or honey

1 teaspoon vanilla extract

⅔ cup dried fruit, chopped if large

Optional additions: ½ cup chocolate chips, unsweetened coconut flakes

Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. 

In a large mixing bowl, combine oats, nuts, seeds, salt, and cinnamon. In a separate mixing bowl, combine oil, maple syrup or honey, and vanilla extract. Pour wet mixture over dry ingredients and stir until everything is evenly coated. Spread granola in an even layer on your parchment lined baking sheet. Bake until lightly golden brown, about 25 minutes, stirring halfway through. 

Remove from the oven and cool, undisturbed, for 1 hour. Granola will crisp up as it cools. Top with dried fruit and any additional flavorings. Store in an airtight container on the counter for up to 2 weeks.
