Corn Salad with Chile and Lime
Garlic Parmesan Crusted Delicata Squash
1 large Delicata Squash
3-4 Tbsp Olive Oil
1/2 tsp salt
3 Garlic Cloves
1/4 tsp red pepper flakes
1/3 cup Shredded Parmesan
1/2 cup Panko Crumbs (We carry GF crumbs!)
Parsley for garnish
Preheat oven to 375 degrees.
In a large bowl, add in the olive oil, salt, pepper, garlic, and pepper flakes. Mix it evenly and add in the squash. Gently toss the squash to coat it all in oil.
Add in the panko crumbs and parmesan. Mix it all together again gently to coat the squash.
Lay out the squash on a silicone lined baking sheet. Sprinkle any of the panko and parmesan that might have gotten left behind in the bowl, on top of the squash.
Bake for 20 minutes, or until the squash is tender. Serve immediately with parsley sprinkled on top.
