Gluten Free Tonkatsu Sauce

1/4 cup ketchup

3 tablespoons apple cider vinegar

2 tablespoons tamari

1 tablespoon maple syrup

1 teaspoon yellow mustard

1/8 teaspoon onion powder

1/8 teaspoon garlic powder

1/8 teaspoon ground ginger

Pinch of salt

Pinch of allspice

Pinch of ground cloves

Combine all ingredients in a small pot. Heat on low, stirring frequently, until simmering then turn off heat and allow to cool to room temperature before using. Heating isn’t strictly necessary, but does help the flavors come together.
