Green Goddess Dressing

This creamy, herbaceous delight is the perfect companion for salads, veggies, or as a zesty dip to brighten up any meal.

Using a food processor, pulse the herbs, garlic and greens until finely chopped. Add the rest of the ingredients and blend until smooth. If using a blender, chop herbs and garlic prior to adding to a blender, then add the rest of the ingredients and blend until smooth.
This makes a wonderful alternative to Caesar dressing. You can also thicken it with ½ avocado and use it as a dip for crudité platter.

Ingredients

  • ½ packed cup of parsley, stems removed
  • ½ packed cup of other soft herbs, remove thick stems (Tarragon and chive are the classic choices. Basil, dill and cilantro are other good choices.)
  • 1 clove of garlic or 1 small shallot
  • 1 cup Greek whole fat yogurt (to make vegan, substitute vegan mayonnaise)
  • Handful of spinach, kale, or arugula, stems removed
  • 1 teaspoon of soy sauce (or use 2-3 anchovies)
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 tsp capers
  • Salt and black pepper to taste
